​The USDA Research Lab in Peoria has been generating innovations, including food ingredients and processing technologies, for more than 70 years.  From the early days when Xanthan was developed, through the discovery of fluffy cellulose and later the fat-replacing Trim Technologies, to the recent low-glycemic sweetener used in Glucerna and the current research into phytochemicals and nutraceuticals – this lab has been partnering with the private sector to improve the quality, safety and healthfulness of American foods.

You are invited to tour this landmark research center and meet some of the scientists whose visionary research today is contributing to the foods on our tables tomorrow.
